Development of advanced methods for analysis of multiple contaminants and their metabolites in food, feed, biological and environmental matrices; investigation of preventive measures and mitigation strategies:

B. FOOD QUALITY ATTRIBUTES AND AUTHENTICATION; BIOPROSPECTION
Implementation of novel approaches for characterization and classification of:
- Metabolome / foodome: fingerprinting and/or profiling methods employing high resolution MS (ambient, LC, GC); advanced data processing; specific markers´ identification
- Biologically active compounds: non-target screening for ‘unknowns’ in plants / microorganisms; identification based on cutting-edge mass spectrometric techniques; assessment of chemical cocktails in combination with bioactivity testing
- Flavours / odours: combination of instrumental and sensory analysis; assessment based on the combination of comprehensive GC and olfactometry
TRAINING AND STUDY STAYS are offered to PhD students / postdoc young researchers interested in the above areas.
The UCT Prague closely cooperates with EU Reference Laboratories (EURLs) network in the field of QA/QC strategies, interlaboratory validation studies, reference materials and traceability of chemical measurements.
‘ACCREDITED TESTING AND METROLOGICAL LABORATORY’ of the Department of Food Analysis and Nutrition performs according to the International standard ISO/IEC 17025:2005; accreditation was provided by the Czech Accreditation Institute, signatory of the ILAC-MRA. For an external QC, the laboratory regularly participates in the proficiency testing (FAPAS, EU PT, IRMM, IAEA, etc.).

Research interests
Target/non-target analysis of food contaminants and positive biologically active compounds
- Development, optimization, and validation of analytical methods based on ultra-performance liquid chromatography coupled to mass spectrometry for analysis of contaminants (mainly mycotoxins, pesticides, toxic alkaloids), and positive bioactive compounds (mainly antioxidants) in foods.
- Research targeted on “masked” mycotoxins, with a special focus on the glycosylated forms occurring as a result of special food processing technologies where enzymatic action plays a role (malting / brewing); assessment of various sample preparation techniques, including the immunoaffinity chromatography, for their pre-concentration; assessment of the possibilities of high-resolution mass spectrometry, including the ion mobility mass spectrometry, for their characterization (structure elucidation) and detection.
- Studying of the fate of free and “masked” mycotoxins within the food and feed processing.
Metabolomic fingerprinting / profiling for food authenticity and frauds revealing
- Exploiting of high-resolution mass spectrometry for performing of studies focused on food authenticity and food frauds revealing.

Research interests
Research focused on the monitoring of the various groups of organic contaminants (pesticide residues, brominated flame retardants, polychlorinated biphenyls, chlorinated paraffins, perfluoroalkylated compounds, phthalates, polycyclic aromatic hydrocarbons including their metabolites) in food, food supplements, environmental samples including human biomonitoring. Development and validation of analytical methods using gas or liquid chromatography in coupled with mass spectrometric detection.
