Ústav analýzy potravin a výživy je součástí Fakulty potravinářské a biochemické technologie. Výzkumné projekty jsou zaměřeny především na problematiku kvality, autenticity a bezpečnosti potravin, krmiv, potravinových surovin, doplňků stravy apod. Zvláštní pozornost je věnována studiím zabývajícím se interakcemi/degradacemi jednotlivých složek potravin, což může vést ke změnám nutriční hodnoty a/nebo senzorických vlastností. Velká část výzkumu se soustředí na hodnocení vlivu životního prostředí na člověka, hodnocení cest expozice různým skupinám látek, především v rámci lidského biologického monitoringu. V posledních letech jsou v rámci interdisciplinárního výzkumu aplikovány tzv. „omics“ technologie při posuzování in vivo/in vitro účinků vyvolaných biologicky aktivními látkami (zdraví prospěšnými, i toxickými).

CHEMICKÁ BEZPEČNOST POTRAVIN

Vývoj nových pokročilých postupů pro analýzu různých skupin kontaminantů v potravinách, krmivech a vzorcích životního prostředí; výzkum preventivních opatření a strategií vedoucích k jejich minimalizaci:

  • Mykotoxiny a další přírodní toxiny
  • Rezidua pesticidů / veterinárních léčiv
  • POPs a jiné průmyslové kontaminanty
  • Kontaminanty z materiálů přicházejících do styku s potravinami / migranty
  • Procesní kontaminanty, Antinutriční látky

 

KVALITA A AUTENTICITA POTRAVIN (FALŠOVÁNÍ POTRAVIN)

Implementace nových analytických postupů pro charakterizaci a klasifikaci:

  • Metabolomu: metody profilování nebo fingeprintu (otisky prstů) založené na použití hmotnostní spektrometrie s vysokým rozlišením (ve spojení s kapalinovou (LC), plynovou (chromatografie) nebo ambientní Ms); pokročilé zpracování dat; identifikace markerů
  • Biologicky aktivních látek: bioprospekce; necílová analýza (non-target pro screening) "neznámých"  látek v rostlinách / mikroorganismech; identifikace látek využívajících techniku vysokorozlišovací hmotnostní spektrometrie
  • Aromatické látky: kombinace instrumentální a senzorické analýzy; hodnocení založené na kombinaci analýzy pomocí plynové chromatrografie a olfaktometrické detekce

 

 Naše pracoviště úzce spolupracuje v oblasti QA / QC s referenčními laboratořemi EU (EURL) sítě, účastní se mezilaboratorních studiích, a participuje i na přípravě referenčních materiálů.

 "Metrologická a zkušební laboratoř" Ústavu analýzy potravin a výživy je akreditována podle mezinárodní normy ISO / IEC 17025: 2005 Českým institutem pro akreditaci, pro externí kontrolu kvality, laboratoř se pravidelně účastní zkoušení způsobilosti (FAPAS, EU PT, IRMM, IAEA, etc.).

Metrologická a zkušební laboratoř, celoškolské vědecko-výzkumné pracoviště zřízené při Ústavu analýzy potravin a výživy FPBT VŠCHT Praha.

Laboratoř je akreditována Českým institutem pro akreditaci podle ČSN EN ISO/IEC 17025:2005 (Posuzování shody-všeobecné požadavky na způsobilost zkušebních a kalibračních laboratoří) jako zkušební laboratoř č. 1316.2.

Laboratoř nabízí:

  • provádění akreditovaných i neakreditovaných zkoušek a poskytování konzultací a expertíz v oblasti analýzy potravin, lihovin, potravních doplňků, zemědělských produktů, krmiv, složek životního prostředí a biologicky aktivních přírodních látek, včetně látek návykových,
  • vývoj a validaci analytických metod a detekčních technik,
  • organizaci a interpretaci mezilaboratorních testů a studií,
  • účast na mezinárodní spolupráci v oblasti rozvoje a standardizace analytických metod  (spolupráce s NMi, Evropskými referenčními laboratořemi pro potraviny a IRMM),
  • provádění výzkumné činnosti v oblasti analytických postupů, detekčních a separačních technik a chemické metrologie,
  • provádění forenzních analýz a zpracování expertních posudků.     

Laboratoři je přiznán flexibilní rozsah akreditace: může modifikovat existující zkušební metody a/nebo rozšířit rozsah zkoušených parametrů v dané oblasti akreditace, případně vyvíjet další zkušební metody v rámci akreditovaných zkoušek.
Aktuální seznam činností prováděných v rámci flexibilního rozsahu je k dispozici v laboratoři.
Laboratoř je způsobilá poskytovat odborná stanoviska a interpretace výsledků zkoušek.
